White Chili

It’s time for another recipe – this one is one of my family’s favorites.  I obviously don’t fix it often enough because when someone took a spoonful of white chili this evening at dinner, he chortled with delight and said, “This is so good!”

That made me smile!  I hope you all enjoy the recipe – it’s easy, delicious, and obviously makes you smile when you eat it!


1 ½ lbs. chicken – cubed (canned chicken works well in this)
1 small onion – diced
1-2 cloves garlic – minced (to taste, or use garlic powder)
½ tsp. ginger
½ tsp. salt
½ tsp. sage
½ tsp. cumin
½ tsp. pepper
2 cans white beans
2 cups chicken broth

Sauté chicken (unless using canned), onion, garlic in a little olive oil.
Add the rest of the spices and chicken broth.  Simmer.

3 Tbls. butter
¼ cup flour

Whisk together – stir in and blend into chili until thick.

Serve with a great big green salad and warm cornbread with honey butter.
